1Make the flour mixture
In a shallow bowl, combine flour, garlic powder, paprika, salt, and pepper.

2Beat the eggs
In another shallow bowl, beat the eggs.

3Prepare the breadcrumbs
In a third shallow bowl, place the panko breadcrumbs.

4Coat the walleye
Dip each walleye strip in the flour mixture, then in the egg mixture, and finally in the breadcrumbs, pressing the breadcrumbs onto the fish to coat well.

5Heat the oil
Heat about 1 inch of vegetable oil in a large skillet over medium-high heat.

6Fry until golden
Fry the fish strips until golden brown and crispy, about 2–3 minutes per side.

7Drain
Drain the fish strips on a paper towel-lined plate.

8Make the sauce and serve
In a small bowl, mix sweet chili sauce and chopped cilantro. Serve the walleye fingers hot with sweet chili sauce on the side for dipping.
