1Chop the walleye
In a food processor, pulse the walleye fillets until finely chopped. Transfer the fish to a large bowl.

2Mix the patty ingredients
To the bowl with the fish, add the red onion, red and green bell peppers, cilantro, garlic, cumin, smoked paprika, salt, black pepper, breadcrumbs, and beaten eggs. Mix until well combined.

3Form the patties
Using your hands, form the mixture into 4–6 patties, depending on the size you prefer.

4Cook the patties
Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is hot, add the patties to the skillet and cook for 3–4 minutes per side, or until golden brown and cooked through.

5Make the jalapeño and lime aioli
While the walleye cakes are cooking, make the jalapeño and lime aioli. In a small bowl, whisk together the mayonnaise, pickled jalapeños, garlic, lime juice, and salt until well combined.

6Assemble and serve
Place a lettuce leaf and a slice of tomato on the bottom half of each brioche bun. Top with a walleye cake, and drizzle with the jalapeño and lime aioli. Serve immediately with your favorite sides and a cold beer.
